Really depends on what product, what market, what customer, etc...

  1. Do a business model canvas
  2. Research the target customer segment
  3. Create a persona (sketch, demographics, behaviors, and problems/goals
  4. Use the channels from your canvas to source about 20 sample people.
  5. Make a list of what you think their top problems are.
  6. Schedule problem interview sessions, have a partner take notes.
  7. Ask them to validate the problems, uncover any that you hadn't though of.
  8. See if you have a compelling enough customer problem to move forward, otherwise start over.
There's a chapter in my book on this:

The key thing is cadence. If you have a regular cadence of customer conversation then you'll always stay in touch. We follow a 1-2 week sprint process where at the end of the sprint, we speak with or test the product with 3-5 customers. What we learn from that is applied into future sprints and product decisions.

You can find the customers from your existing base, craigslist, discussion forums etc.
