Who are the right investors to approach in Hong Kong for a SaaS / B2B / product in Seed Round?

Every investor has a specialty and tends to invest in this specific field.

I am looking for investors specialized / interested in Saas / B2B products specifically for a seed round. What is the best way to find investors in this very specific niche?

I'm a member of the Hong Kong Business Angels Network and also a member of TiE Hong Kong, and I can look over the the plan and then let you know what you have to do to get funding in Hong Kong. I can also provide information about Hong Kong government programs, and how to get set up in HK. Finally, I can help you find customers in Hong Kong for your product.

I also maintain a "pitch book" which I send to people who I think are associated with family offices. One funny part of Hong Kong is that it is very, very easy to meet people that seem associated with investors, but they will almost never tell you what they are looking for, so I just put together a pitch book and then every time I see someone that might be interested in investing, I just send them the pitch book.

Hong Kong angels tend to top out at about USD 500k. VC's start getting interested at USD 5 million and above. There is something of a gap between the angels and VC's, but I expect that someone will figure out how to fill it up in the next few months.

One thing about HK investors are that they are particularly picky about cash flow. Also, they tend to invest in what they know, which means that a pure tech play is going to find it hard to get funding, but if its got some connection with real estate, fashion, film, retail, or manufacturing then it gets easier. The other thing is that VC's will almost certain reject a business that is focused on Hong Kong since it's too small to get a good return, but angel investors will look at those businesses.

Also looking at your product. One thing that I would recommend that you do is to talk to InvestHK and see if they can put you in touch with HKTDC, the HK Convention Center and Cyberport. These groups put on a lot of trade shows themselves and they also manage venues for other trade shows.

Also there are a number of startups you should talk to such as https://www.eventxtra.com/ http://www.nexchange.com/. The big consulting firms like KPMG and Ernst and Young also put on trade shows as to the investment banks, and I can connect you with people there.
