What are the strategic advantages of setting up an umbrella LLC while working on a few partnerships?

Working on beginning a few partnerships and had heard of setting up an Umbrella LLC. Does anyone have experience with starting/working under an umbrella company this way? What are the advantages or disadvantages to consider? As well, what is the best way to set the structure of any one partnership when involved with more than one? in terms of responsibilities and commitment of partners towards the idea?

Any perspective on the subject would be great. Thanks -Rob

I am setting up partnerships for two separate mobile app companies. Both will be set up as S-corporations, so the question is whether or not there are any things I can legally do to best position and protect myself as two partnerships come together at once?
