What are some creative ways to establish consumer demand?

What are some good methods of establishing consumer demand for a new mobile application before development? I'm confident my product will garner ample attention, but am looking for good ways to get quantifiable data.

I just undertook this exercise last week. I setup a 'landing page' on QuickMVP.com to collect emails of those interested in my app. I drove paid traffic to the page via AdWords and Facebook Ads and via my friend/colleague network.

See getsparqed.com for my page.

The thinking behind the setup is true customer intent is measure by a willingness to pay (or in my case a willingness to enter email address). I had a 30% dropoff from people who indicated they wanted to download my (yet to be created) app and those who entered their address.

I've found that teases always work pretty well. Concentrate on the early adopters by doing a bit of PR and a small tease of what the product may or may not include with the tech blogs and see how the articles are received.

unless your business is named Apple you can't "establish consumer demand" - demand is there or it's not. You can measure or simulate a measure of demand by doing what Ebube did; set up a landing page and drive traffic to it and then get visitors to actually commit something - their $$ or email address or feedback, etc. the key is getting real consumers to actually make some commitment. You can build a landing page with some automated forms and stats reporting on http://kickofflabs.com/ in very little time.
